 Lentil Avocado & Kale Salad

DSC_0235.jpg.jpg4.jpg  It looks WAY better than the picture…although the picture doesn’t look to bad either. I wanted something with a goodly amount of protein in it today I took creative license on a recipe given to me from a friend who is a fellow “kinda” vegan. Meaning we try our best “most” of the time.


3 Cups cooked Lentils (or buy the Trader Joe’s precooked ones)

1/2 Cup carrots chopped or grated

1/2 Cup celery chopped

1/4  Cup chopped red onion diced small

Handful of baby kale

1 Avocado sliced and cubed

1/2 block of Tofu cubed and soaked over night in Braggs Liquid Aminos



3 Tbs red wine vinegar

2 Tbs olive oil

1 tsp Dijon mustard

1 tsp sugar

1/4 tsp garlic salt

salt and pepper to taste

Toss all ingredients together well and season accordingly.


Be sure to make this up ahead of time because it tastes better when it has had time to sit a few hours.
